Baking tools do not need to be clever, and a cutter is the plainest of the lot: a closed outline with a cutting rim to press through rolled dough and a top edge to push against with the heel of your hand. Everything after that, from the flavour to the icing to whether the biscuits survive the walk to school, is down to the baker. Made cutters have quietly displaced the old tinplate ones in a lot of kitchens, largely because you can have the shape you want this evening instead of ordering it and waiting a week. Beyond biscuit dough they earn their keep on shortbread, gingerbread, fondant, marzipan and salt-dough decorations, and children take to them because pressing out the shapes is the best part of the job. This is a single-shape cutter of the sort that lives in the drawer with the rolling pin and gets pulled out every December without fail.
